Palacio de Granda offers a varied, nutritionally balanced menu, freshly prepared in our own kitchen. Our nutrition specialists understand the importance of developing healthy eating habits from an early age. Adapted menus are also available to meet the individual needs of our students.
Ausolan is a 100% nationally owned business group and a leader in catering and integrated cleaning services for communities. With over 55 years of experience, it brings together different local projects while maintaining close relationships with clients and respecting the traditions of each region.
Founded in 1969 by a group of 17 women, with the support of Father José María Arizmendiarrieta, Ausolan began as a worker cooperative. These forward-thinking women challenged the conventions of their time, fighting for their right to work as a path towards personal development and financial independence.

We reduce the use of salt and bring out the natural flavour of food through spices, herbs and healthy cooking techniques.

Our menus are designed to reduce added sugars, encouraging healthier choices and supporting students’ wellbeing.

We prioritise baked, steamed and grilled dishes, limiting fried and pre-cooked foods to offer meals that are nutritious, balanced and full of flavour.
At Palacio de Granda, we are committed to a balanced diet that includes plant-based proteins in a natural and enjoyable way. Rich in fibre, vitamins and antioxidants, they support cardiovascular and digestive health, encourage healthy eating habits and complement a varied diet. Our menus provide complete, sustainable nutrition adapted to each student’s growth and wellbeing.
First courses
-Pulses: 1-2 times per week-Vegetables: 1-2 times per week-Rice*: once per week-Pasta*: once per week*Brown rice or wholemeal pasta is served 4 times per month.
Second courses
-Meat: maximum 3 times per week-Fish (white and blue): 1-3 times per week-Eggs: 1-2 times per week-Plant-based protein: 1-5 times per week
Side dishes
-Assorted salads: 3-4 times per week-Other side dishes: 1-2 times per week
Dessert
-Fresh fruit: 4-5 times per week-Plain yogurt, unsweetened curd or fresh cheese: maximum once per week

-Wholemeal bread: at least 2 times per week-Water: the only drink offered
